Try This Delicious Gluten Free Spiced Oatmeal
INGREDIENTS
GLUTEN FREE SPICED APPLE OATMEAL

2 cups gluten-free rolled oats

3⁄4 cup unsweetened shredded coconut
-
2 pieces large apples peeled, cored and chopped into 1⁄2”

1⁄2 cup coconut sugar
-
1 tablespoon ground cinnamon
-
1/2 teaspoon fine salt
-
1 teaspoon baking powder
-
2 eggs lightly beaten
-
5 cups almond milk
-
4 tablespoons unsalted butter melted
-
2 teaspoons fresh lemon juice
-
1 teaspoon pure vanilla extract
FOR COCONUT MILK GLAZE:

1 cup canned coconut milk
-
1/2 cup coconut sugar

Preheat the oven to 350 degrees.

Prepare a lightly oiled 9 x 13 casserole or baking dish

In a sizeable mixing bowl, combine the dry ingredients (Kuranda Wholefood’s spiced apple muesli, shredded coconut, rolled oats chopped apple, baking powder, cinnamon, coconut sugar, and salt). Stir thoroughly to combine.

In a separate mixing bowl, whisk together the almond milk, eggs, melted butter, vanilla extract and lemon juice.

Pour the wet mixture over the dry oat mixture and stir to combine.

Pour the muesli mixture into the prepared baking dish. Spread the mixture so that it is evenly
distributed

Bake in the oven for 40 to 50 minutes or until the top is golden brown and the liquid is dissolved.

Allow to cool for 15 minutes before serving with Coconut glaze
THE COCONUT GLAZE:

Add sugar and coconut milk to a smaller saucepan and bring it to a boil.

Reduce the heat to medium and allow the coconut mixture to continue cooking, whisking frequently, until the coconut milk begins to thicken and turns a slightly darker shade. Allow about 25-30 minutes.

Remove coconut milk glaze from the heat and allow it to cool slightly. The mixture will become thicker the longer it cools.

Prepare and serve over the spiced apple oatmeal!
